Vegan Gluten Free Pancakes

Pancake Day is one of my fave days of the year! It always has been and I’ve always been a greedy guts with pancakes.

For as long as I can remember I would enjoy Pancake Day by demolishing 7 or 8 pancakes, after dinner.

Of course, I wasn’t eating vegan gluten free pancakes so I always felt so sick afterwards but it never put me off!

Since my intolerances to gluten, eggs and dairy came about, I tried various ‘free from’ pancake mixes, using a ‘chia egg’ to replace the actual egg. You can just imagine how ghastly those pancakes were!

I then just left the thin crepe pancakes for a while, opting for the American style of fluffy pancake instead…

For Pancake Day 2018 HOWEVER, I was pretty damn adamant that I was going to eat 8 thin crepe pancakes on Pancake Day once more!

I worked and failed and worked and failed and worked and SUCCEEDED at making vegan gluten free pancakes and they are exactlythesameasactualpancakes *heart eyes*

Toppings for Vegan Gluten Free Pancakes

Toppings-wise, I am a lemon and sugar gal through and through but if we wanna make things a bit more exciting, here are some of my favourite (more exciting) pancake toppings for vegan gluten free pancakes:

  • Natures Store Cocoa Hazelnut Spread (Vegan Nutella)
  • Banana and Vegan Nutella (add in vegan ice cream if you’re feeling bougie af)
  • My Caramelised Bananas *more heart eyes*
  • Strawberries!!!!! Can’t get enough of them! Especially with some melted veeg chocolate drizzled all over.
  • Not one my faves but Herscheys Chocolate Syrup is vegan. I think it’s way too artificial but it is there if you like the more man-made flavours…
  • My mum’s topping of choice is lemon and sugar with golden syrup drizzled over! It’s a goodun!
  • Peanut butter!!!! Add in bananas and ice cream for a sundae style treat.

These are just some of the ways we like to enjoy pancakes. Let me know how you love yours, I’m up for trying some new combos!

Ingredients
  • 450 ml dairy-free milk I've used both almond and soya
  • 250 g gluten free plain flour I like Doves Farm
  • 1 tbs caster sugar
  • 2 tbs vegatable oil
  • 1/2 tsp vanilla extract
  • 1 pinch salt
Instructions
  1. This is a one bowl mix so just add all ingredients to a bowl and whisk so there aren't any lumps of flour. Leave to stand and thicken slightly for 10 minutes.
  2. Add some vegetable oil to a frying pan, wipe with a piece of kitchen and save kitchen roll to re-oil pan between pancakes. Set on a medium-low heat.
  3. Once pan is hot, use a ladle to add some pancake mix to pan. Swirl pan to coat in pancake mix. Leave to cook for a couple of mins. Use a spatula to gently lift the edges and when the underneath is cooked, flip the pancake over until the other side is cooked.
  4. Re-oil pan using kitchen roll between each pancake. Continue until all pancakes are made. This will yield 8 pancakes but if you make them very thin or a little smaller than mine, you could get up to 10.
