Pancake Day is one of my fave days of the year! It always has been and I’ve always been a greedy guts with pancakes.
For as long as I can remember I would enjoy Pancake Day by demolishing 7 or 8 pancakes, after dinner.
Of course, I wasn’t eating vegan gluten free pancakes so I always felt so sick afterwards but it never put me off!
Since my intolerances to gluten, eggs and dairy came about, I tried various ‘free from’ pancake mixes, using a ‘chia egg’ to replace the actual egg. You can just imagine how ghastly those pancakes were!
I then just left the thin crepe pancakes for a while, opting for the American style of fluffy pancake instead…
For Pancake Day 2018 HOWEVER, I was pretty damn adamant that I was going to eat 8 thin crepe pancakes on Pancake Day once more!
I worked and failed and worked and failed and worked and SUCCEEDED at making vegan gluten free pancakes and they are exactlythesameasactualpancakes *heart eyes*
