Vegan gluten free cinnamon rolls

I did not ever think vegan gluten free cinnamon rolls could be a thing. Definitely not something that actually tasted like a cinnamon roll.

Here we are though. After a banging plate of cinnamon rolls, I can confirm that vegan gluten free cinnamon rolls are somethin’ rather special!

If you watch my video, you’ll see that I am not keen on day old cinnamon rolls. These are most definitely best served warm right after they’ve been baked.

If you are eating them on day two or three, give them 30 secs+ in the microwave to warm them through and make everything gooey again. It makes the world of difference!

Ingredients
Dough
  • 500 ml dairy-free milk I use almond or soya
  • 115 g melted vegan butter I use Vitalite
  • 50 g caster sugar
  • 7 g active dried yeast
  • 750 g + 75g gluten free plain flour I use Doves Farm
  • 1 tsp salt
Filling
  • 130 g vegan butter I use Vitalite
  • 150 g dark brown sugar
  • 2 tbs cinnamon
Topping
  • 130 g icing sugar
  • 2 tbs dairy-free milk I use almond or soya
  • 1/2 tsp vanilla extract
Instructions
  1. Mix milk, melted butter, and sugar together. Sprinkle yeast over and leave to rest for 5 minutes.
  2. Stir then add 750g plain flour and the salt and stir until everything is combined. Cover with cling film and leave to rest in a warm place for an hour.
  3. Add 75g of plain flour and stir through, knead with your hands if it's easier.
  4. Flour work surface and rolling pin and roll out dough until it's a large rectangle. This dough will feel drier than ordinary dough and it will not be as elastic so take care when rolling out.
  5. Spread the butter over the dough, sprinkle with brown sugar and cinnamon then roll the long side up to form a long sausage of dough.
  6. Cut into 1" thick rounds and place into a lined 10" cake tin. Cover and leave to rest for 30 minutes. Preheat oven to 180C fan during this time.
  7. Bake cinnamon rolls for 30 minutes.
  8. To make the topping, mix the icing sugar, milk and vanilla extract together and pour over warm cinnamon rolls. Serve warm!
  9. Great the day after if they are warmed through. 30 seconds in the microwave should do it.
