Malibu and Pineapple Cupcakes

I have to admit, I’m not much of a drinker.

I don’t like the lack of control, especially over my own blabby mouth, and, for the most part, I don’t actually like the taste of alcohol.

One drink I have got the hots for though, is Malibu and pineapple.

It’s sweet, tropical and a proper celebration drink.

That’s why I thought Malibu and pineapple cupcakes were the perfect cupcake flavour for celebrating 2017.

Flavours

The best thing about these cupcakes is that you can play with the flavours as much as you like!

I have made these cupcakes so that the rum flavour is quite subtle because of the fact above about me not really liking the taste of alcohol.

If you loooove rum, you can add rum to your pineapple syrup after it’s simmered and actually soak the cupcakes in rum.

The more syrup you use, the more flavour you’ll have but, be cautious, you don’t want a soggy cupcake…

If you don’t like rum altogether then add some coconut flavour and some desiccated coconut and keep the pineapple. You’ll get the same kind of flavour, just without the alcohol.

Ingredients
Malibu Cupcakes
  • 200 g butter softened
  • 200 g caster sugar
  • 200 g self raising flour
  • 4 large eggs
  • 2 tbs Malibu or pineapple juice
Pineapple Syrup
  • 50 g sugar (granulated or caster)
  • 50 ml pineapple juice
Malibu Buttercream
  • 200 g butter softened
  • 400 g icing sugar
  • 2 tbs Malibu
  • 1 blob food colouring
Instructions
Malibu Cupcakes
  1. Line cupcake tray with cupcake cases and preheat oven to 140C fan.
  2. Beat butter and caster sugar until pale and fluffy.
  3. Add flour and eggs and beat until incorporated. Add rum or pineapple juice and mix in.
  4. Add mix to cupcake cases using an ice cream scoop and bake for around 25 minutes or until cakes spring back when lightly pressed.
  5. When baked, remove form the oven and leave to cool completely on a cooling rack.
Pineapple Syrup
  1. Heat sugar and pineapple juice in a saucepan until sugar dissolves and syrup begins to simmer. Remove from heat and leave to cool.
  2. Skewer each cupcake with a cake tester or cocktail stick and use a silicone brush to soak each cupcake with pineapple syrup.
Malibu Buttercream
  1. Beat butter, icing sugar, Malibu and colour together until pale, light and fluffy. Make sure there are no streaks of unmixed colour.
  2. Add buttercream to a piping bag with a 1M nozzle and pipe buttercream swirls onto your cupcakes.
  3. For a real celebratory finish, add some indoor sparklers.
