I have to admit, I’m not much of a drinker.
I don’t like the lack of control, especially over my own blabby mouth, and, for the most part, I don’t actually like the taste of alcohol.
One drink I have got the hots for though, is Malibu and pineapple.
It’s sweet, tropical and a proper celebration drink.
That’s why I thought Malibu and pineapple cupcakes were the perfect cupcake flavour for celebrating 2017.

The best thing about these cupcakes is that you can play with the flavours as much as you like!
I have made these cupcakes so that the rum flavour is quite subtle because of the fact above about me not really liking the taste of alcohol.
If you loooove rum, you can add rum to your pineapple syrup after it’s simmered and actually soak the cupcakes in rum.
The more syrup you use, the more flavour you’ll have but, be cautious, you don’t want a soggy cupcake…
If you don’t like rum altogether then add some coconut flavour and some desiccated coconut and keep the pineapple. You’ll get the same kind of flavour, just without the alcohol.
