Something’s happened recently. Oreos are my jam. My tiny, little, GINORMOUS obsession. I have these sweet little discs of deliciousness stashed in several cupboards and drawers that I tend to be near at different times of the day, just in case I need a hit. Like I said, something’s happened, I’m not ashamed, I’m going with it, I’ve actually actively embraced it by cramming Oreos into every meal I can get away with.
When I say ‘Best Ever Cookies and Cream Oreo Blondies’ I’m not overselling even slightly. These are everything you’d want from a blondie, or a sweet treat in general actually. They are soft, so chewy, sweet, the texture, the taste, everythingabouttheseblondiesisamazing.
I mixed everything in a large bowl with a handmixer so it was super quick and easy to clean up. I used my Nutribullet to blitz my Oreos. A Nutribullet is technically a ‘healthy appliance’. We (sometimes) use it for healthy smoothies and juices etc that we hide spinach and kale in *gag*. I mainly use it for smashing up Oreos and making awesome milkshakes. It’s brilliant whether your intentions are healthy or not!
340g light brown sugar
115g softened butter ( I use salted)
1 tsp vanilla extract
340g plain flour
1/2 tsp baking powder
1 pack Oreos (or your favourite biscuit- these can be made with any biscuit!)
Preheat your oven to 180C (160C fan) and line and grease a 9″square tin or a 10″ round tin (both will take the same size mixture, it just depends which you have more easily available).
NB. Don’t worry if you don’t have these tins sizes, you could use one that is slightly bigger or slightly smaller and just adjust your cooking time, a bit longer for a smaller tin because the blondies will be thicker, and a bit less time for a bigger tin because the blondie mixture will be spread more thinly.
Beat the butter and brown sugar until light and fluffy, add in your eggs and vanilla and beat until incorporated.
Add in your flour and baking powder and beat until incorporated.
Blitz your Oreos leaving 4 or 5 unbroken. You could use a food processor, Nutribullet *cough*, anything to blitz those Oreos to a fine crumb. If you prefer a chunkier texture then by all means whizz them a bit less so you have larger chunks of Oreo in the mix.
Stir your cookie crumbs into your blondie mixture and pour into your lined tin. Break up your remaining Oreos into small chunks and drop onto the top of your mixture in your tin. Make it look real pretty. You could also sprinkle over some chocolate chips if you think you might need a bit more chocolate- hormonal females, HOLLA!
Bake in your preheated oven for around 20-25 minutes. I would say use a skewer and check when it comes out clean but these are so amazingly soft and chewy they will pretty much always leave a bit of crumb on the skewer. Likewise, they might feel a bit squishy when you press them at this stage BUT blondies will continue to cook a bit when they come out of the oven and they will fo sho firm up as they cool so I’d say 20 minutes, 25 to be extra sure.
Then whip them out and sniff them. Sniff and leave them alone so you don’t burn your oesophagus trying to choke down 160C blondies. We have ALL been there.
Once they have cooled you can cut them into squares, the size of which you may choose. Chaz, my cake loving boyfriend, and I are horrendously greedy so whilst you could probably get a good 16 good size blondies from this we cut them into 8 pieces and blamed each other when they were all gone.
Try to eat one warm, with ice cream, or cream, or, at the every least, a glass of milk. Being really honest I have no idea how long these could potentially last because we smashed them. I’d guess around 5 days at room temperature and covered but you can freeze them if you want to pace yourself.
Let me know how you like them!!
Just for lols look what I actually did whilst writing this post. I didn’t even start out with the packet but I was literally grinding my teeth writing about Oreos- hands up, addict!
The whole pack and I was actually surprised when I realised I had reached the last one. Now I’m a bit ashamed.
Enjoy these blondies! Seriously the. best. ever.
Love, Billie xx
