How To Make Strawberry Cheesecake Macarons

30th January 2017

Why Make Macarons? If you’ve had a macaron, you’ll know exactly why you should be making macarons. If you haven’t had a macaron… well, it’s like the most delicately light, sweet ‘biscuit-y type’ piece of heaven in existence.  They are so delicate that they make me feel delicate… and a bit more glam than I actually am. In real life I am zero percent glam. With a macaron I’m like 20% glam. That’s quite a jump and it feels good. Macarons can be flavoured and filled with anything from simple buttercream to the more indulgent patisserie cremes and ganache, meaning they can be as rustic or as delectable as you like. I’ve filled mine with a cheesecake filling to make strawberry cheesecake macarons. You can subscribe to my YouTube channel right here! The Best Macaron Recipe My strawberry cheesecake macarons recipe is made from adapting and combining both a recipe from the Laduree Sucres book and one from The Secret […]

How To Make Mehndi Cupcakes

23rd January 2017

To be given the design brief of ‘Mehndi cupcakes in bright, girly colours’ is an actual dream! Mehndi, or Henna, patterns are some of the most beautiful patterns I’ve ever seen. Traditionally, they are super complex but they can be simplified for Mehndi cupcakes and still look amazing. You can subscribe to my YouTube channel right here! Fondant Mehndi Cupcake Toppers I used a very pale pastel pink fondant for my cupcake toppers and cut out circles slightly smaller than the diameter of my cupcake cases. Any size circle will do as long as it’s either the same size as your cupcake, or smaller, just not larger. I piped my Mehndi designs onto my fondant with royal icing coloured with Americolor gel colours. Click here to see how to make royal icing in under 5 minutes. Alternatively, you can buy a royal icing mix in the supermarket and just add water. How To Pipe To pipe nice clean lines, the nozzle […]

Modern Engagement Cake Tutorial

16th January 2017

How To Make Stone Fondant Stone and marble fondant effects are a huge trend right now and are so perfect for modern cakes! The following instructions are for stone fondant. If you would prefer marble, just use much less grey. I’ve also included affiliate links for the most important products but if you need to know where to get anything else, feel free to ask away. To make stone fondant, add small amounts of black fondant to chunks of white fondant and knead until marbled but not blended. Roll each marbled chunk into a sausage shape. Take two more chunks of white fondant and roll each into a sausage shape. Place the four sausages of fondant next to each other and twist together. Continue to twist and fold until there are no large parts that are just white, or just grey. Give your fondant a small knead to bring it together into a ball and roll out on cornflour. Lay […]

How To Paint A Message Onto A Cake

9th January 2017

Making a Template The best way to paint a message onto a cake is to make a custom template, and the easiest way to do that is with a computer. This way, you have complete control over the font, the position and the size of your message. There are two ways to transfer a template to fondant. One is to score a dresden tool over the template on soft fondant so a shallow indentation is left behind. The other is to trace in pencil over the back of the template, place it onto dried fondant and draw over the front of template with pencil to leave a faint pencil line behind on the dry fondant. Pencil is non-toxic and it is such a tiny amount you wouldn’t be causing any danger to anyone eating the cake but if you have any concern at all then use the dresden tool method.   You can subscribe to my YouTube channel […]

Malibu and Pineapple New Year Cupcakes

2nd January 2017

Malibu and Pineapple Cupcakes I have to admit, I’m not much of a drinker. I don’t like the lack of control, especially over my own blabby mouth, and, for the most part, I don’t actually like the taste of alcohol. One drink I have got the hots for though, is Malibu and pineapple. It’s sweet, tropical and a proper celebration drink. That’s why I thought Malibu and pineapple cupcakes were the perfect cupcake flavour for celebrating 2017. You can subscribe to my YouTube channel right here! Flavours The best thing about these cupcakes is that you can play with the flavours as much as you like! I have made these cupcakes so that the rum flavour is quite subtle because of the fact above about me not really liking the taste of alcohol. If you loooove rum, you can add rum to your pineapple syrup after it’s simmered and actually soak the cupcakes in rum. The more syrup you use, the […]
